
just a busy little restaurant in the Fulham Road
in 1980 - until I saw this - a dilapidated farmhouse
in an enchanting, private valley close to the Dart River.
Thus began a long project bringing the building back,
developing the Devon Fingals and extending it organically
to what it is today.
Over a quarter of a century on and there have been many changes,
however the philosophy has remained the same from the
day we started with one room in 1981.
We set out to make fingals such a relaxed and easy going
a place that guests would feel entirely at home. Service
would willingly be there - but not at the flick of a
finger nor the drop of a hat. Guests could come down
for breakfast when they liked and could be sure they
would not face a room of hushed voices. We refrained
from labelling ourselves as "an hotel" so
that the uninitiated would not come with preconceived
ideas.
